Bulgur Pilaf Recipe

Preparation Time: 15 min.
Cooking Time: 35 min.

2 Tomatoes (small diced)
2 Green Peppers (chopped)
1 Onion (small diced)
2 Garlic Cloves (finely chopped)
2 Tbsp Vegetable Oil
2 Cups Bulgur
4 Cups Water/Chicken Broth
2 Tsp Salt
2 Tsp Black Pepper
½ Tbsp Tomato Paste

Heat oil in a large pot over medium heat. Saute small diced onion in it until translucent (max.10 min.) and then add in finely chopped garlic. Cook for a minute and add chopped green peppers. Cook the mix on a medium low heat for a few minutes until the green peppers start to soften and onions start to turn pink/golden (max. 10 min.). Then, add in small diced tomatoes and cook it until veggies start to turn orange (max.10 min.). After that, add in the tomato paste, salt and pepper.

The next step is to add in bulgur to the cooked mix and stir well so it is equally distributed. Turn the heat to a medium high and add water/chicken broth. Once it starts simmering, put the lid on and let it cook on a medium heat until the water is almost completely evaporated (15-20 min., depending on the bulgur kind). Remove the lid, wrap it in a clean kitchen towel and place it back on the pot. Turn the heat to a low heat and cook for another 10 minutes. Turn the heat off, let the bulgur sit for 5 minutes then fluff it with a fork.
