Köfte with Roasted Vegetables Recipe


2 lbs of traditional köfte (Köfte Revolution brand)
8 medium potatoes
4 hot long green peppers                    
2 medium tomatoes
1 large yellow onion
3 tablespoon of olive oil
6 sprigs of fresh parsley or 2 teaspoons of dry parsley
salt and black pepper


First, wash and cut in half 8 medium potatoes, 4 hot long green peppers, 2 medium tomatoes and 1 large yellow onion into 4 pieces. Place all vegetable in a large bowl. Add 3 tablespoons of olive oil, 6 springs of fresh parsley, salt and pepper into a bowl. Then, mix all ingredients nicely. Meanwhile, preheat your oven to 425℉. Place köfte and seasoned vegetables together into a large baking/roasting skillet. Note: If the köfte is frozen, you don’t need to thaw them out, just place it into skillet as it is.  Next, put the skillet in a preheated oven. Roast vegetables and meatballs for 30 minutes until it browned/crisped and flip side half way through cooking (approximately 15 minutes). Take the roasted dish out of an oven, check the readiness of the meal and serve it.
